Arugula Salad!

SALAD INGREDIENTS:

  1. Arugula
  2. Lettuce mix
  3. Radish microgreens
  4. Bell pepper, diced
  5. English cucumber, chopped
  6. Cherry tomatoes, halved
  7. 4 oz goat cheese, crumbled
  8. Optional toppings: toasted pine nuts or walnuts

DRESSING INGREDIENTS:

  1. 3 tbsp extra-virgin olive oil
  2. 2 tbsp balsamic vinegar
  3. 1 tsp honey
  4. 1 tsp Dijon mustard
  5. Salt and freshly ground black pepper, to taste

INSTRUCTIONS:

  1. Prepare the vinaigrette. In a small bowl or jar with a tight-fitting lid, combine the olive oil, balsamic vinegar, honey, and Dijon mustard. Whisk or shake until well-emulsified. Season with salt and pepper to taste.
  2. Make the salad. In a large bowl, combine the baby arugula, chopped lettuce, radish microgreens, diced bell pepper, chopped cucumber, and halved cherry tomatoes.
  3. Dress the salad. Just before serving, drizzle the honey-balsamic vinaigrette over the salad greens and vegetables. Toss gently to combine, ensuring everything is evenly coated.
  4. Add toppings and serve. Sprinkle the crumbled goat cheese and any optional toppings like toasted nuts over the dressed salad. Serve immediately to enjoy its fresh, crisp texture :--)
