
Arugula Salad!
SALAD INGREDIENTS:
- Arugula
- Lettuce mix
- Radish microgreens
- Bell pepper, diced
- English cucumber, chopped
- Cherry tomatoes, halved
- 4 oz goat cheese, crumbled
- Optional toppings: toasted pine nuts or walnuts
DRESSING INGREDIENTS:
- 3 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper, to taste
INSTRUCTIONS:
- Prepare the vinaigrette. In a small bowl or jar with a tight-fitting lid, combine the olive oil, balsamic vinegar, honey, and Dijon mustard. Whisk or shake until well-emulsified. Season with salt and pepper to taste.
- Make the salad. In a large bowl, combine the baby arugula, chopped lettuce, radish microgreens, diced bell pepper, chopped cucumber, and halved cherry tomatoes.
- Dress the salad. Just before serving, drizzle the honey-balsamic vinaigrette over the salad greens and vegetables. Toss gently to combine, ensuring everything is evenly coated.
- Add toppings and serve. Sprinkle the crumbled goat cheese and any optional toppings like toasted nuts over the dressed salad. Serve immediately to enjoy its fresh, crisp texture :--)
