INGREDIENTS:

  1. Microgreens
  2. 3-4 cups of lettuce, torn into bite-sized pieces
  3. 4 radishes, thinly sliced
  4. 2 ounces crumbled feta cheese
  5. 3 tablespoons lightly toasted sunflower seeds

LEMON POPPY SEED DRESSING:

  1. 1/2 cup olive oil
  2. 1/4 cup lemon juice
  3. 1 tablespoon Dijon mustard
  4. 1 tablespoon honey (or to taste)
  5. 1 teaspoon poppy seeds
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon black pepper

INSTRUCTIONS:

  1. Prepare the dressing: In a small bowl or jar, whisk or shake together all the dressing ingredients until well combined.
  2. Prepare the vegetables: Wash and dry the microgreens and lettuce. Thinly slice the radishes.
  3. Assemble the salad: In a large bowl, combine the microgreens, lettuce, radishes, sunflower seeds, and feta cheese.
  4. Dress the salad: Drizzle the lemon poppy seed dressing over the salad and toss gently to coat. Add enough dressing to your liking.
