INGREDIENTS:
- Microgreens
- 3-4 cups of lettuce, torn into bite-sized pieces
- 4 radishes, thinly sliced
- 2 ounces crumbled feta cheese
- 3 tablespoons lightly toasted sunflower seeds
LEMON POPPY SEED DRESSING:
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey (or to taste)
- 1 teaspoon poppy seeds
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
INSTRUCTIONS:
- Prepare the dressing: In a small bowl or jar, whisk or shake together all the dressing ingredients until well combined.
- Prepare the vegetables: Wash and dry the microgreens and lettuce. Thinly slice the radishes.
- Assemble the salad: In a large bowl, combine the microgreens, lettuce, radishes, sunflower seeds, and feta cheese.
