
INGREDIENTS:
- About 3 cups of watermelon, cut into 1-inch chunks
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, roughly chopped
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- Kosher salt and freshly ground black pepper, to taste
INSTRUCTIONS:
- Combine cut watermelon, crumbled feta, and chopped mint in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a separate bowl to make the dressing.
- Pour the dressing over the salad ingredients and gently toss.

TIPS + VARIATIONS:
- Toasted pumpkin seeds can be added for crunch.
- U can also include things like red onion + arugula
- Use balsamic vinegar in the dressing if you'd like!
- Flaky sea salt can be used as a garnish if you have some around.
