INGREDIENTS:

  1. About 3 cups of watermelon, cut into 1-inch chunks
  2. 4 ounces feta cheese, crumbled
  3. 1/4 cup fresh mint leaves, roughly chopped
  4. 3 tablespoons extra-virgin olive oil
  5. 1 tablespoon fresh lemon juice
  6. Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS:

  1. Combine cut watermelon, crumbled feta, and chopped mint in a large bowl.
  2. Whisk together olive oil, lemon juice, salt, and pepper in a separate bowl to make the dressing.
  3. Pour the dressing over the salad ingredients and gently toss.

TIPS + VARIATIONS:

  1. Toasted pumpkin seeds can be added for crunch.
  2. U can also include things like red onion + arugula
  3. Use balsamic vinegar in the dressing if you'd like!
  4. Flaky sea salt can be used as a garnish if you have some around.
