INGREDIENTS:
- Beets + Onions (+ anything else u feel like pickling today!!)
- 1 ½ c. vinegar
- 1 cup water
- 1 ¼ cup sugar
- 1 tsp allspice
- ½ cinnamon stick
- ¼ tsp whole cloves
- ½ tsp salt
INSTRUCTIONS:
- Cook beets til just tender + cool in cold water.
- Slip off skins + slice thinly.
- Combine vinegar, water, sugar, spices + salt.
- Bring to a boil + simmer for 15 minutes.
- Add a thinly sliced onion + beets :-)
- Simmer for 5 minutes longer
