INGREDIENTS:

  1. Beets + Onions (+ anything else u feel like pickling today!!)
  2. 1 ½ c. vinegar
  3. 1 cup water
  4. 1 ¼ cup sugar
  5. 1 tsp allspice
  6. ½ cinnamon stick
  7. ¼ tsp whole cloves
  8. ½ tsp salt

INSTRUCTIONS:

  1. Cook beets til just tender + cool in cold water.
  2. Slip off skins + slice thinly.
  3. Combine vinegar, water, sugar, spices + salt.
  4. Bring to a boil + simmer for 15 minutes.
  5. Add a thinly sliced onion + beets :-)
  6. Simmer for 5 minutes longer
