INGREDIENTS:

  1. 2 cucumbers, sliced thinly
  2. 1 small white onion. sliced thinly
  3. 1 small jalapeño pepper, sliced thinly
  4. 1 c. sugar
  5. 1 c. Vinegar
  6. 1 c. Water
  7. 1/4 tsp each: pepper, salt, turmeric, mustard seed

INSTRUCTIONS:

  1. Place everything in a bowl, stir to combine.
  2. Cover + refrigerate for at least 24 hours, stirring occasionally.
  3. Pack into glass jars.

TIPS:

  1. 1/4 tsp of hot pepper flakes can be substituted for the jalapeño in a pinch :-)
