
Lil' Peach Crisp!
INGREDIENTS:
- 2 medium peaches, peeled and diced.
- 1 teaspoon all-purpose flour.
- 1/2 teaspoon cinnamon.
- 1 teaspoon granulated sugar.
FOR THE TOPPING:
- 2 tablespoons packed brown sugar.
- 2 tablespoons rolled oats.
- 3 teaspoons all-purpose flour.
- 3 teaspoons cold coconut oil or butter, cut into small pieces.
INSTRUCTIONS:
- Preheat the oven to 375°F and lightly grease two ramekins or a small baking dish.
- In a small bowl, toss the diced peaches with 1 teaspoon of flour, cinnamon, and 1 teaspoon of sugar until evenly coated + divide the peach mixture evenly between the prepared ramekins.
- In another small bowl, combine the brown sugar, oats, and 3 teaspoons of flour.
- Using your fingers or a fork, cut in the cold coconut oil or butter until the mixture is crumbly and the fat is in pea-sized pieces.
- Top the peaches: Crumble the topping evenly over the peaches in the ramekins.
- Bake for 15 minutes, or until the topping is golden brown.
- Let cool slightly and serve warm, optionally with vanilla ice cream or whipped cream.
