Lil' Peach Crisp!

INGREDIENTS:

  1. 2 medium peaches, peeled and diced.
  2. 1 teaspoon all-purpose flour.
  3. 1/2 teaspoon cinnamon.
  4. 1 teaspoon granulated sugar.
  5. FOR THE TOPPING:

  6. 2 tablespoons packed brown sugar.
  7. 2 tablespoons rolled oats.
  8. 3 teaspoons all-purpose flour.
  9. 3 teaspoons cold coconut oil or butter, cut into small pieces.

INSTRUCTIONS:

  1. Preheat the oven to 375°F and lightly grease two ramekins or a small baking dish.
  2. In a small bowl, toss the diced peaches with 1 teaspoon of flour, cinnamon, and 1 teaspoon of sugar until evenly coated + divide the peach mixture evenly between the prepared ramekins.
  3. In another small bowl, combine the brown sugar, oats, and 3 teaspoons of flour.
  4. Using your fingers or a fork, cut in the cold coconut oil or butter until the mixture is crumbly and the fat is in pea-sized pieces.
  5. Top the peaches: Crumble the topping evenly over the peaches in the ramekins.
  6. Bake for 15 minutes, or until the topping is golden brown.
  7. Let cool slightly and serve warm, optionally with vanilla ice cream or whipped cream.
