
Dutch Baby!
INGREDIENTS:
- fresh peaches :-) 🍑
- butter + brown sugar to cook peaches in (optional)
- 1 cup all-purpose flour
- 1/8 teaspoon salt
- 1 cup milk (room temperature!)
- 1 tablespoon granulated sugar or honey
- 4 eggs (room temperature!)
- 4 tablespoons unsalted butter
- cinnamon
INSTRUCTIONS:
- Place an ovenproof dish or cast iron pan in the oven and preheat to 425 degrees.
- Prepare the Peaches: You'll want to use fresh, ripe peaches. Peel and slice them thinly, or cut them into small dice. Cook the peaches in a little butter and brown sugar in a skillet to soften them up slightly (optional).
- Once the oven is hot, add the butter to the pan and let it melt completely in the oven.
- In a separate bowl, thoroughly mix the flour, salt, and milk, and cinnamon. You can also add some vanilla extract if you'd like.
- Add the sugar (or honey) to the batter. Then, add the eggs one at a time, beating well after each addition.
- When the butter is completely melted and the pan is hot in the oven, carefully add the peaches and pour the batter into the hot pan.
- Bake for 25 minutes or until golden and puffed.
TIPS:
- Resist the urge to open the oven door while the Dutch Baby is baking, as this can cause it to deflate.
- Hot Pan is Key: Ensuring the pan is sizzling hot before adding the batter is crucial for the Dutch Baby to puff up beautifully.
- Serve with your favorite toppings like maple syrup, whipped cream or powdered sugar with a squeeze of lemon.
