Dutch Baby!

INGREDIENTS:

  1. fresh peaches :-) 🍑
  2. butter + brown sugar to cook peaches in (optional)
  3. 1 cup all-purpose flour
  4. 1/8 teaspoon salt
  5. 1 cup milk (room temperature!)
  6. 1 tablespoon granulated sugar or honey
  7. 4 eggs (room temperature!)
  8. 4 tablespoons unsalted butter
  9. cinnamon

INSTRUCTIONS:

  1. Place an ovenproof dish or cast iron pan in the oven and preheat to 425 degrees.
  2. Prepare the Peaches: You'll want to use fresh, ripe peaches. Peel and slice them thinly, or cut them into small dice. Cook the peaches in a little butter and brown sugar in a skillet to soften them up slightly (optional).
  3. Once the oven is hot, add the butter to the pan and let it melt completely in the oven.
  4. In a separate bowl, thoroughly mix the flour, salt, and milk, and cinnamon. You can also add some vanilla extract if you'd like.
  5. Add the sugar (or honey) to the batter. Then, add the eggs one at a time, beating well after each addition.
  6. When the butter is completely melted and the pan is hot in the oven, carefully add the peaches and pour the batter into the hot pan.
  7. Bake for 25 minutes or until golden and puffed.

TIPS:

  1. Resist the urge to open the oven door while the Dutch Baby is baking, as this can cause it to deflate.
  2. Hot Pan is Key: Ensuring the pan is sizzling hot before adding the batter is crucial for the Dutch Baby to puff up beautifully.
  3. Serve with your favorite toppings like maple syrup, whipped cream or powdered sugar with a squeeze of lemon.
