Black garlic is a fermented garlic that has gone through the “Maillard Effect”, which is when sugars encounter heat + turn brown + delicious! Think roasted coffee beans or roasted marshmallows-- both Maillard! :-) We use Chesnok Red garlic to make ours because it naturally has a higher sugar content, perfect for fermenting! Our garlic is grown with absolutely zero herbicides or pesticides + using no plastic landscape fabric!!
Suuuper umami / savory!! Also sweet. Lacks the spiciness of fresh garlic + some people compare it to balsamic vinegar, dates, soy sauce + molasses, with a nice tang! A very rich, tasty, complex flavor indeed! Cloves are soft n’ sticky!
Research shows that black garlic has higher antioxidant levels than regular garlic (which is already quite good for ya’!). It contains several times more polyphenols (which fight cell damage), flavonoids (that reduce inflammation + increase blood flow to ur brain), + water-soluble S-allyl-cysteine (which helps boost ur body’s protective enzymes) than raw garlic!! Some ppl even take black garlic as a supplement, but we keep it real with the whole food! <3
Whole bulbs can last 6-12 months! Store in a cool, dark n’ dry pantry! Once peeled, store in an airtight container in the fridge. Can also be frozen!
